I just picked up a bottle of Nom Meow myself... It sure does smell good! :) As far as my research suggests, it's a sweet vanilla-flavoured yeast-type extract, that's not actually extracted from yeast. Something about potato starches? Sometimes goes by the name of "Amyle Essence"... a name of equally head-scratching quality. But it's used extensively in Thai dessert baking. I hope that eases everyone's mayonnaise headaches for the time being.</description>
